- 2 cans (14 ounces each) diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups vegetable or chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon olive oil
- ½ cup heavy cream (optional)
- Fresh basil leaves for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook for another 1-2 minutes.
- Pour in canned tomatoes (with juices) and broth. Stir in basil and oregano, then bring to a simmer for 15-20 minutes.
- Blend the soup until smooth using an immersion blender or regular blender.
- If desired, stir in heavy cream for richness; season with salt and pepper to taste.
- Serve hot, garnished with fresh basil leaves.
