- 1 small onion, diced
- 2–3 jalapeños, seeded and diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk or half-and-half
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 cups cooked grilled chicken breast, shredded or diced
- ½ cup corn (optional)
- 2 tbsp chopped green onions or chives (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and jalapeños and cook until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a gentle simmer.
- Stir in cream cheese until fully melted and smooth.
- Add milk, shredded cheddar cheese, smoked paprika, salt, and pepper. Stir until cheese is melted and the soup is creamy.
- Add the grilled chicken and corn (if using). Simmer for another 5–10 minutes to heat through and blend flavors.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with chopped green onions or chives.

- Customize the heat level by adjusting the jalapeños.
