- 1 pound large shrimp, peeled and deveined
- 2 cups quick-cooking grits
- 4 cups chicken or vegetable broth
- 4 tablespoons unsalted butter, divided
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- Salt and black pepper to taste
- Chopped scallions for garnish (optional)
Instructions
- In a large saucepan, bring the broth to a boil over high heat. Reduce heat to low, then slowly whisk in the grits. Cook, stirring occasionally, until thickened, about 5-7 minutes. Remove from heat and stir in 2 tablespoons of the butter. Cover and keep warm.
- In a large skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Add the onion and sauté until translucent, about 5 minutes. Add the garlic and Cajun seasoning and cook for 1 minute, until fragrant.
- Add the shrimp to the skillet and cook, stirring occasionally, until the shrimp are pink and opaque, about 3-5 minutes. Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes, until the sauce has thickened slightly.
- Spoon the creamy grits into bowls and top with the Cajun shrimp mixture. Garnish with chopped scallions, if desired. Serve hot and enjoy!
