- 4 ounces dark chocolate, chopped
- 1/2 cup unsalted butter, plus more for greasing
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 2 tablespoons all-purpose flour
Instructions
- Preheat oven to 450°F. Grease four 6-ounce ramekins with butter.
- In a double boiler or microwave, melt the dark chocolate and butter, stirring occasionally until smooth. Set aside to cool slightly.
- In a medium bowl, whisk together the eggs, egg yolks, and sugar until light and fluffy, about 2-3 minutes.
- Gently fold the melted chocolate mixture into the egg mixture until just combined. Fold in the flour until no dry pockets remain.
- Divide the batter evenly among the prepared ramekins.
- Bake for 8-10 minutes, until the edges are set but the centers are still soft and gooey.
- Carefully run a knife around the edges of the ramekins and invert the cakes onto plates. Serve immediately, garnished with powdered sugar, if desired.
