Ingredients

  • 2 cups pearl couscous
  • 3 cups vegetable broth
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Cook pearl couscous according to package directions using vegetable broth.
  2. While couscous is cooking, prepare the vegetables.
  3. Chop the red bell pepper, cucumber, and red onion.
  4. Chop the fresh parsley and mint.
  5. In a small bowl, whisk together olive oil, lemon juice, and oregano for the dressing.
  6. Season the dressing with salt and pepper.
  7. Once the couscous is cooked, let it cool slightly.
  8. In a large bowl, combine the cooked pearl couscous, diced vegetables, and chopped herbs.
  9. Pour the dressing over the salad.
  10. Toss gently to combine all ingredients.
  11. Serve this delicious pearl couscous salad chilled.
