Description

These Passion Fruit Bars are going to be your new sweet/tart obsession. They have a buttery shortbread crust and a deliciously creamy, tangy and tropical passion fruit filling.

Ingredients

Scale
  • 8 oz unsalted butter (1 cup), melted and slightly cooled
  • 3.5 oz granulated sugar (1/2 cup)
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 8.5 oz all-purpose flour (2 cups)
  • 8 large eggs (at room temperature)
  • 16.3 oz granulated sugar (2 1/3 cups)
  • 14 oz passion fruit puree (1 1/2 cups)
  • 2.12 oz all-purpose flour (1/2 cup)

Instructions

  1. Preheat the oven to 350°F. Line a 9×13 pan with parchment paper so that it extends up the sides, and spray the foil with nonstick cooking spray.
  2. In a bowl, whisk together the melted butter, sugar, vanilla, and salt. Once mixed, add the flour and stir with a spatula until combined and no streaks of flour remain.
  3. Scrape the dough into the pan and press it into an even layer. It might seem a little greasy—this is normal.
  4. Pre-bake the crust for about 25 minutes at 350° F, until it’s lightly golden on top.
  5. In a large bowl, whisk together the eggs, granulated sugar, and passion fruit puree. Sift the flour on top of the egg mixture, and whisk it in as well.
  6. When the crust has finished pre-baking, pour the filling over the hot crust.
  7. Reduce the temperature to 325°F and bake for an additional 25-30 minutes.
  8. Once done, remove the pan from the oven and let it cool until it reaches room temperature. Then refrigerate the pan until the bars are completely chilled.
  9. Remove the entire thing from the pan using the extra parchment as handles. Place it on a cutting board and cut into bars.
  10. Right before serving, sprinkle the tops of the bars with powdered sugar.
  11. Storage: Store extra bars in an airtight container in the refrigerator for up to a week, or in the freezer for 3-4 months.

Notes

  • The filling stays nice and creamy, although the crust will get softer over time.
  • Wipe the knife clean between cuts to get nicely cut bars.
