Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. This is your dry pancake batter base.
- In a separate bowl, whisk the egg and milk together. If using butter, whisk it into the wet ingredients.
- Pour the wet ingredients into the dry ingredients. Whisk until just combined. A few lumps are okay; do not overmix. Overmixing can lead to flat pancakes.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the pancake batter onto the hot griddle. Use about 1/4 cup of batter for each pancake.
- Cook for about 2-3 minutes per side, or until golden brown and cooked through. Flip when you see bubbles forming on the surface of the pancake.
