  • For the Cake:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • For the Jelly Filling:
  • 1/2 cup fruit jelly or jam (strawberry, raspberry, or cherry)
  • 1 tablespoon lemon juice
  • For the Pink Frosting:
  • 2 cups powdered sugar
  • 1/4 cup unsalted butter, softened
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons raspberry or strawberry puree (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt. Set this aside. In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs, one at a time, and stir in the vanilla extract. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined.
  2. Divide the batter evenly between the two prepared cake pans and smooth the tops with a spatula. Bake for 25-30 minutes, or until a toothpick comes out clean. Let the cakes cool for 10 minutes in the pans before transferring them to a wire rack to cool completely.
  3. Mix the fruit jelly with the lemon juice. If the jelly is too thick, warm it up briefly in the microwave to make it easier to spread.
  4. Beat powdered sugar and butter together until smooth. Add heavy cream, vanilla extract, and fruit puree if using, to achieve the desired pink color and consistency.
  5. Once the cakes are cool, place one layer on a serving platter. Spread the jelly filling evenly over it. Add the second cake layer and frost with the pink frosting.
  6. Once the cake is frosted, slice and serve. Enjoy!
