- 1 pound pork tenderloin, thinly sliced
- 2 cups shredded cabbage
- 1 cup julienned carrots
- 8 ounces sliced mushrooms
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.
- Add the pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove the pork from the pan and set aside.
- In the same pan, add the remaining 1 tablespoon of oil. Stir in the cabbage, carrots, mushrooms, and green onions. Cook for 3-4 minutes, stirring occasionally, until the vegetables are tender-crisp.
- Add the garlic and ginger to the pan and cook for 1 minute, until fragrant.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and cornstarch. Pour the sauce into the pan and stir to coat the vegetables.
- Add the cooked pork back to the pan and toss everything together until heated through, about 2-3 minutes.
- Serve the Moo Shu Pork immediately, with steamed rice or warm tortillas on the side.
