- 1 cup long-grain white rice
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder (optional)
- 1 1/2 cups chicken broth (or vegetable broth for a vegetarian option)
- 1 cup crushed tomatoes (or tomato sauce)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup frozen peas (optional)
- Fresh cilantro, chopped (for garnish, optional)
Instructions
- Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté for 2–3 minutes, until softened. Add garlic and cook for another 30 seconds until fragrant.
- Add rice to the skillet and stir occasionally for 2–3 minutes until the rice turns golden.
- Stir in cumin, chili powder, and crushed tomatoes. Cook for about 1 minute to absorb the flavors.
- Add the chicken broth, salt, and black pepper. Bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes until the rice is tender and all liquid is absorbed.
- Stir in frozen peas (if using). Cover and let it sit for 5 minutes. Fluff the rice with a fork.
- Garnish with fresh cilantro and serve with your favorite Mexican dishes.
