- 1 pound large shrimp
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 ripe mango
- 1/4 red onion
- 1 jalapeno
- 1/4 cup fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup mayonnaise
- 2 tablespoons Sriracha
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 cup cooked rice
- 1/2 avocado
Instructions
- Dice the ripe mango into small cubes.
- Combine mango, halved cherry tomatoes, and chopped red onion in a medium bowl.
- Drizzle with half of the lime juice and season with salt and pepper.
- Toss gently until well combined and let sit for 15 minutes.
- In a mixing bowl, add peeled shrimp, remaining lime juice, chili powder, and olive oil.
- Toss shrimp until evenly coated with spices and marinate for 10-15 minutes.
- Heat a skillet over medium-high heat and add a splash of olive oil.
- Cook marinated shrimp for 2-3 minutes on each side until pink and opaque.
- Remove shrimp from heat and let them rest for a few moments.
- Slice avocados in half, remove the pit, and scoop out the flesh.
- Layer shrimp, avocado, and mango salsa in a serving bowl.
- In a small bowl, whisk together olive oil, lime juice, and chili powder for sauce.
Notes
- Adjust the spice level by adding more or less jalapeno.
- For a creamier texture, add more mayonnaise to the sauce.
- Serve immediately for the best flavor.
