- 12 oz (about 3 cups) pasta
- 1 lb ground beef
- 1 small onion
- 3 cloves garlic
- 1 cup corn kernels
- 1 can (15 oz) black beans
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 packet taco seasoning or homemade blend
- Salt and pepper
- 2 cups shredded Mexican blend cheese
- 1 cup salsa
- Fresh cilantro or green onions
- Optional toppings: sour cream
Instructions
- Gather all ingredients: ground beef, pasta, diced tomatoes, onion, cheese.
- Measure out each ingredient for a streamlined cooking process.
- Boil salted water in a large pot and cook pasta until al dente, about 8-10 minutes.
- Drain pasta, reserving a cup of starchy water, and rinse under cold water.
- Heat olive oil in a skillet over medium heat and sauté onion for 5 minutes.
- Add ground beef to the skillet, breaking it up as it cooks for 6-8 minutes until browned.
- Stir in taco seasoning, diced tomatoes, and simmer for 5 minutes.
- In a mixing bowl, combine cooked pasta with the meat mixture and stir in sour cream.
- Add reserved pasta water gradually if the mixture is too thick.
- Preheat oven to 350°F (175°C) and transfer pasta mixture to a greased baking dish.
- Sprinkle shredded cheese on top and cover with aluminum foil.
- Bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly.
