Scale
- 1 cup (225 g) unsalted butter
- ½ cup (100 g) granulated sugar
- 2 cups (250 g) all-purpose flour
- ¼ tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream the softened butter until light and fluffy, about 3-5 minutes.
- Gradually add granulated sugar and mix until creamy and well combined.
- Sift all-purpose flour and salt into the butter-sugar mixture.
- Gently fold the flour into the mixture until just combined; the dough should be crumbly.
- Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
- Remove the dough and let it sit for a few minutes to soften slightly.
- Divide the dough into two pieces and roll each into a log, 1-2 inches in diameter.
- Wrap the logs in parchment paper or plastic wrap and chill for an additional 20-30 minutes.
- Slice the chilled logs into ½ inch thick rounds using a sharp knife.
- Place the cookie slices on a lined baking sheet, leaving space between them.
- Bake for 12-15 minutes until edges are light golden brown, then cool on the baking sheet.
