Ingredients
Scale
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 1 head garlic, roasted and cloves mashed
- 1 onion, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400°F. Cut the top off the head of garlic, drizzle with olive oil, and wrap in foil. Roast for 45 minutes until soft. Squeeze the cloves out of the skins and mash.
