- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 jalapeños, seeds removed and chopped
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat a large pot or Dutch oven over medium heat. Add the olive oil and sauté the chopped onion for about 3-4 minutes until softened.
- Add the minced garlic and chopped jalapeños to the pot. Cook for another 1-2 minutes, stirring occasionally, until fragrant.
- Stir in the diced tomatoes, chicken broth, heavy cream, ground cumin, smoked paprika, and cayenne pepper. Bring the mixture to a simmer, stirring occasionally.
- Add the shrimp to the pot and cook for 4-5 minutes, or until the shrimp are pink and fully cooked.
- Season the soup with salt and pepper to taste. Remove from heat.
- Ladle the soup into bowls and garnish with fresh cilantro before serving.
Notes
- You can adjust the spice level by adding more or fewer jalapeños.
- This soup can be made ahead of time and reheated.
