Instructions
- Prepare the salsa: Reserve ⅓ cup for the beans and simmer the rest in a skillet for 5 minutes until thickened.
- Cook the beans: Combine reserved salsa with black beans, their liquid, water, salt, and pepper. Simmer, then mash about ¾ of the beans. Stir in lime juice.
- Crisp the tortillas: Heat olive oil in a skillet. Cook tortillas until golden around the edges.
- Cook the eggs: In the same skillet, heat olive oil and fry eggs to desired doneness.
- Assemble the dish: Spread beans over tortillas, top with an egg, warm salsa, and garnish with toppings.
