- 2 boneless chicken breasts
- 2 (10.5 oz) cans cream of chicken soup
- 1 cup chicken broth
- 12 oz frozen mixed vegetables
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chicken bouillon powder
- Black pepper to taste
- 1 can refrigerated biscuits or 1 sheet puff pastry
Instructions
- Gather all your ingredients and wash and chop the vegetables.
- Cut chicken breasts into bite-sized pieces or use pre-cooked chicken.
- Drizzle 1 tbsp of olive oil at the bottom of the crockpot.
- Layer chopped potatoes and carrots at the bottom of the pot.
- Add the chicken pieces evenly over the vegetables.
- Sprinkle frozen peas on top of the chicken.
- Season with 1 tsp of dried thyme, 1 tsp of dried rosemary, and salt and pepper.
- Pour in the chicken broth and heavy cream over the ingredients.
- Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours.
- After cooking, mix 1 tbsp of cornstarch with water and stir into the pot.
- Cook for an additional 15 minutes on high to thicken the stew.
- Ladle the stew into bowls and top with biscuits or fresh herbs before serving.
