- 2 medium zucchini, sliced into 1/2-inch thick coins
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced

- 1/4 cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1/4 teaspoon crushed red pepper flakes (optional)
- 2 green onions, sliced
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- In a large skillet or wok, heat the vegetable oil over high heat.
- Add the chicken and stir-fry for 3-4 minutes, until no longer pink.
- Add the zucchini and continue to stir-fry for 2-3 minutes, until the zucchini is crisp-tender.
- Stir in the garlic and ginger and cook for 1 minute, until fragrant.
- In a small bowl, whisk together the soy sauce, rice vinegar, and honey. Pour the sauce into the skillet and toss everything to coat.
- Bring the sauce to a simmer and cook for 1-2 minutes, until slightly thickened.
- Remove from heat and stir in the green onions and cilantro (if using).
- Serve immediately over steamed rice or noodles.
