Ingredients

  • 1 pound beef chuck (cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 1 large onion (chopped)
  • 2 carrots (chopped)
  • 2 stalks celery (chopped)
  • 4 cloves garlic (minced)
  • 1 cup red wine
  • 2 cups beef broth
  • 1 (14-ounce) can diced tomatoes
  • 12 ounces pasta (penne or fettuccine)
  • Grated Parmesan cheese and fresh parsley for serving

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Season beef cubes with salt and pepper, then sear until browned on all sides. Remove from pot.
  2. In the same pot, sauté chopped onion, carrots, and celery for about 5-7 minutes until softened. Add minced garlic and cook for an additional minute.
  3. Deglaze with red wine, scraping the pot’s bottom to release browned bits. Simmer for 2-3 minutes.
  4. Return the beef to the pot along with beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer covered for 1.5 to 2 hours until tender.
  5. Cook pasta according to package instructions; drain and set aside.
  6. Once the beef is tender, stir in the cooked pasta until evenly coated.
  7. Serve topped with grated Parmesan cheese and fresh parsley.
