- 1 pound bok choy, chopped and separated into stems and leaves
- 8 ounces mushrooms (shiitake, cremini, or button), sliced
- 2 tablespoons sesame oil or vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon cornstarch
- 2 tablespoons water
- Toasted sesame seeds
- Green onions, thinly sliced
Instructions
- Whisk soy sauce, rice vinegar, honey, cornstarch, and water until smooth. Set aside.
- Heat oil in a large skillet or wok over medium-high heat. Add garlic and ginger and cook for 30 seconds until fragrant.
- Add mushrooms and stir fry for 3–4 minutes until browned.
- Stir in bok choy stems and cook for 2–3 minutes until slightly tender.
- Add bok choy leaves and sauce. Toss and cook 1–2 minutes until wilted and sauce thickens.
- Remove from heat and garnish with sesame seeds and green onions if desired.
