- 1 cup cooked and pureed beetroots
- 1 tsp ground cardamom
- 1 cup heavy cream
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
Instructions
- In a double boiler or microwave, melt the white chocolate, stirring frequently until smooth. Allow to cool slightly.
- In a food processor, blend the cooked beetroots until smooth and creamy.
- In a large bowl, beat the heavy cream and sugar until stiff peaks form.
- Fold the melted white chocolate, beetroot puree, and cardamom into the whipped cream until well combined.
- Spoon the mousse into individual serving glasses or a serving bowl.
- Refrigerate for at least 2 hours, or until set.
- Serve chilled, garnished with a sprinkle of crushed pistachios and a sprig of fresh mint, if desired.
