Ingredients
- Dough:
- 3/4 cup (184 g) dairy-free milk, heated to 110F
- 1/2 cup (100 g) granulated sugar or coconut sugar, divided
- 4 cups (500 g) bread flour or all-purpose flour
- 2.5 tsp (0.25 oz) dry activated yeast
- 12 tbsp (185 g) unsalted vegan butter, room temperature
- 1/4 cup (62.5 g) unsweetened applesauce or dairy-free yogurt, room temperature
- 1 tsp vanilla extract
- Cheesecake Filling:
- 1 batch vegan cream cheese (or 12 ounces store-bought)
- 1/4 cup (60 mL) vegan heavy cream or coconut cream
- 1 tbsp cornstarch
- 1 tbsp maple syrup or maple butter
- 1/4 cup (50 g) granulated sugar
- 1 tsp vanilla extract or vanilla bean paste
- Cinnamon Apples:
- 2 large Gala or Fuji apples, diced
- 1 tbsp vegan butter
- 3 tbsp light brown sugar
- 2 tsp ground cinnamon
- 1 tbsp water
- Vanilla Crumble Topping:
- 1/2 tbsp flour
- 1/2 cup (63 g) all-purpose flour
- 1/3 cup (80 g) granulated sugar
- 3 tbsp vegan butter, melted
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 1 tbsp soy milk
Instructions
- Prepare the Dough: Grease a bowl. In a large bowl, combine dairy-free milk, 1/4 cup sugar, and yeast. Let sit for 10 minutes until foamy.
- Mix Ingredients: Add bread flour and remaining sugar to the yeast mixture. Mix until combined. Add dairy-free yogurt and vanilla. Mix on medium speed until a shaggy dough forms.
- Knead the Dough: Gradually add vegan butter while mixing on medium speed. Increase speed to high and knead for 10–15 minutes until soft.
- First Rise: Place dough in the greased bowl. Cover and let rise in a warm area for 60–120 minutes until doubled in size.
- Prepare Fillings: If not using store-bought, prepare vegan cream cheese. In another bowl, whisk cream cheese with other filling ingredients.
- Shape the Buns: Line a baking sheet with parchment paper. Divide risen dough into even balls. Roll into smooth balls and place on the parchment paper.
- Second Rise & Preheat Oven: Let shaped buns rest for 15–20 minutes. Preheat oven to 375°F (190°C).
- Assemble Buns: Gently press an indention into the center of each bun. Fill with cheesecake mixture, then apple filling, and top with crumble before baking for 25–30 minutes until golden brown.
