- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 vanilla bean, split and seeds scraped
Instructions
- Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the butter and both sugars together until light and fluffy, about 2-3 minutes. Beat in the eggs, one at a time, then stir in the vanilla extract and vanilla bean seeds.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Scoop heaping tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
