- 1 pound ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 head of cabbage, chopped
- 2 cups beef broth
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes
- 1 cup cooked rice
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.
- Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes, until the onion is translucent.
- Add the chopped cabbage, beef broth, tomato sauce, diced tomatoes, cooked rice, oregano, and basil. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, or until the cabbage is tender.
- Ladle the soup into bowls and serve hot, garnished with fresh parsley if desired.
