  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • For the Caramel Layer:
  • ½ cup unsalted butter
  • ½ cup brown sugar, packed
  • ¼ cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the Chocolate Coating:
  • 1 ½ cups milk or semisweet chocolate chips (or a combination of both)
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch square baking pan with parchment paper for easy removal after baking. In a medium mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add the flour and salt, then mix until just combined. Add the vanilla extract and continue mixing until a soft dough forms. Press the dough evenly into the bottom of the prepared baking pan. Bake for 18-20 minutes, or until the edges are lightly golden. Once done, remove from the oven and allow the shortbread base to cool completely in the pan.
  2. In a medium saucepan, melt the butter over medium heat. Add the brown sugar, sweetened condensed milk, vanilla extract, and salt. Stir constantly until the mixture is smooth and starts to bubble gently. Let the caramel simmer for about 5-7 minutes, stirring frequently to prevent burning. You’ll know it’s ready when it thickens slightly and coats the back of a spoon. Pour the caramel over the cooled shortbread base and spread it out evenly. Let the caramel layer cool completely in the pan.
  3. While the caramel layer is cooling, melt the chocolate. You can use a double boiler or microwave the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring each time until smooth. Once melted, add the vegetable oil to the chocolate and stir to combine. This helps the chocolate become glossy and easy to spread. Pour the melted chocolate over the cooled caramel layer, spreading it out evenly with a spatula. Allow the chocolate to set at room temperature or refrigerate for about 30 minutes, or until the chocolate is firm.
  4. Once the chocolate is set, lift the bars out of the pan using the parchment paper. Use a sharp knife to cut the bars into squares or rectangles, just like the candy bars. Serve and enjoy!
