Main Ingredients:

  • 5 large russet potatoes (baked and mashed)
  • 1 cup sour cream
  • ½ cup heavy cream
  • 4 tbsp butter (melted)
  • 1 ½ cups shredded cheddar cheese
  • ½ cup mozzarella cheese
  • ½ cup cooked bacon (crumbled)
  • 2 green onions (chopped)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste

Optional Add-Ins for Extra Flavor:

  • 1 tsp smoked paprika (for a smoky flavor)
  • ¼ cup cream cheese (for extra creaminess)
  • 1 tsp ranch seasoning (for a bold kick)

Instructions

Step1: Bake the Potatoes

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the russet potatoes, then poke them with a fork.
  3. Bake for about 50–60 minutes, until they are soft inside.
  4. Let the potatoes cool slightly before removing the skins.

Step2: Mash the Potatoes

  1. In a large mixing bowl, mash the baked potatoes until smooth.
  2. Add butter, sour cream, heavy cream, garlic powder, onion powder, salt, and pepper.
  3. Mix well until creamy and fluffy.

Step3: Assemble the Casserole

  1. Preheat the oven to 375°F (190°C).
  2. Spread half of the mashed potatoes into a buttered 9×13-inch baking dish.
  3. Sprinkle half of the shredded cheddar and mozzarella cheese over the potatoes.
  4. Add the remaining mashed potatoes on top.
  5. Sprinkle with the rest of the cheese and crumbled bacon.

Step4: Bake Until Golden and Bubbly

  1. Place the casserole in the oven and bake for 20–25 minutes.
  2. Remove from the oven and sprinkle with chopped green onions.
  3. Serve hot and enjoy!

Notes

  • Use starchy potatoes like russet or Yukon Gold for the fluffiest texture.
  • For extra creaminess, mix in cream cheese or ranch dressing.
  • Make ahead: Assemble the casserole one day in advance, cover, and refrigerate until ready to bake.
  • For a crispier topping, broil the casserole for 2–3 minutes after baking.
