- 1 pound fresh apricots, halved and pitted
- 1 cup water
- 1/2 cup granulated sugar
- 2 tablespoons fresh lemon juice
- 1 cup whole-milk ricotta cheese
- 1 tablespoon powdered sugar, for dusting
- Fresh mint leaves, for garnish
Instructions
- In a medium saucepan, combine the water and granulated sugar. Bring to a simmer, stirring occasionally, until the sugar has dissolved.
- Add the apricot halves to the simmering sugar water. Poach the apricots for 8-10 minutes, or until they are tender but still hold their shape.
- Remove the poached apricots from the liquid using a slotted spoon and transfer them to a bowl. Drizzle the poaching liquid over the apricots and stir in the lemon juice. Allow to cool to room temperature.
- To serve, place a few poached apricot halves in a bowl or on a plate. Top with a dollop of ricotta cheese and a light dusting of powdered sugar. Garnish with fresh mint leaves.
