- 1 onion, diced

- 28 oz can diced tomatoes
- 2 cups vegetable or chicken broth

- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 tablespoons cold unsalted butter, cubed
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup milk
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 5 minutes until translucent.
- Add the garlic and cook for 1 minute until fragrant.
- Pour in the diced tomatoes and broth. Stir in the basil, oregano, salt, and pepper. Bring to a simmer and let cook for 10 minutes.
- In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until mixture resembles coarse crumbs. Stir in the cheddar, parsley, and milk just until combined.
- Drop the dumpling dough by heaping tablespoonfuls onto the simmering soup. Cover and cook for 12-15 minutes until the dumplings are cooked through.
