Ingredients

  • 2 cups heavy cream
  • 1 teaspoon pure vanilla extract
  • 5 large egg yolks
  • ½ cup granulated sugar (plus extra for caramelizing)
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a medium saucepan, heat the heavy cream and vanilla until just below boiling. Remove from heat and let cool slightly.
  3. Whisk together egg yolks, sugar, and salt in a bowl. Gradually add warm cream while whisking to combine.
  4. Strain the mixture through a fine-mesh sieve into another bowl.
  5. Pour into ramekins placed in a baking dish; add hot water to the dish halfway up the sides of ramekins.
  6. Bake for 30-35 minutes until set but slightly jiggly in the center.
  7. Cool at room temperature, then refrigerate for at least 2 hours.
  8. Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
