- 2 cups heavy cream
- 1 teaspoon pure vanilla extract
- 5 large egg yolks
- ½ cup granulated sugar (plus extra for caramelizing)
- Pinch of salt
Instructions
- Preheat oven to 325°F (163°C).
- In a medium saucepan, heat the heavy cream and vanilla until just below boiling. Remove from heat and let cool slightly.
- Whisk together egg yolks, sugar, and salt in a bowl. Gradually add warm cream while whisking to combine.
- Strain the mixture through a fine-mesh sieve into another bowl.
- Pour into ramekins placed in a baking dish; add hot water to the dish halfway up the sides of ramekins.
- Bake for 30-35 minutes until set but slightly jiggly in the center.
- Cool at room temperature, then refrigerate for at least 2 hours.
- Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
