- 4 (6-ounce) cod fillets
- 1 can (14 ounces) full-fat coconut milk
- 1 cup chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon fresh lime juice
- 1 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1–2 Thai bird chilies (optional)
- 1 tablespoon brown sugar
- Zest of 1 lime
- 2 cups fresh spinach leaves
- Fresh cilantro for garnish
Instructions
- In a large skillet, combine coconut milk, chicken broth, fish sauce, lime juice, ginger, garlic, chilies (if using), brown sugar, and lime zest. Bring to a simmer over medium heat.
- Gently add cod fillets into the simmering liquid; reduce heat to low and cover. Poach for about 8-10 minutes until the fish flakes easily with a fork.
- Stir in fresh spinach during the last few minutes of cooking until wilted.
- Serve the poached cod on plates with spinach and broth; garnish with cilantro and lime wedges.
