  • 2 cloves garlic, minced
  • 12 Thai bird chilies (optional)
  • 1 tablespoon brown sugar
  • Zest of 1 lime
  • 2 cups fresh spinach leaves
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, combine coconut milk, chicken broth, fish sauce, lime juice, ginger, garlic, chilies (if using), brown sugar, and lime zest. Bring to a simmer over medium heat.
  2. Gently add cod fillets into the simmering liquid; reduce heat to low and cover. Poach for about 8-10 minutes until the fish flakes easily with a fork.
  3. Stir in fresh spinach during the last few minutes of cooking until wilted.
  4. Serve the poached cod on plates with spinach and broth; garnish with cilantro and lime wedges.
