  • 1 tablespoon tomato paste

  • Fresh cilantro, chopped, for garnish

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  3. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  5. Add minced garlic and ground ginger, cook for 1 minute more until fragrant.
  6. Stir in garam masala, cumin, turmeric, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  7. Pour in crushed tomatoes and tomato paste. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  8. Stir in heavy cream, butter, and sugar. Season with salt and pepper to taste.
