A delicious and easy Tarte Courgette Tomate made with fresh vegetables and flavorful cheese, perfect for any occasion.

- 1 pre-made shortcrust or puff pastry
- 1 tablespoon olive oil
- 1 tablespoon Dijon mustard (optional but recommended)
- 2 medium zucchini, thinly sliced
- 3–4 ripe tomatoes, sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh thyme or 1 teaspoon dried herbes de Provence
- 150g grated cheese (Gruyère, Emmental, or mozzarella)
- 3 eggs
- 200ml crème fraîche or heavy cream
- Salt and freshly ground black pepper to taste
- 1 teaspoon balsamic vinegar
Instructions
- Preheat oven to 180°C (350°F). Roll out pastry and place in a 28cm tart pan. Prick base with a fork.
- Optional: Pre-bake the pastry for 5–7 minutes for extra crispness.
- Spread a thin layer of Dijon mustard over the base.
- In a bowl, whisk together eggs, crème fraîche, garlic, thyme/herbes, salt, pepper, and balsamic vinegar.
- Sprinkle half the grated cheese over the mustard layer.
- Layer zucchini and tomato slices in a circular pattern.
- Pour egg mixture over vegetables, sprinkle remaining cheese, and drizzle with olive oil.
- Bake 25–30 minutes until golden and set. Rest 5–10 minutes before serving.
