- 1 cup (240 ml) ripe blackberries
- 1–2 jalapeños
- 1/2 cup (120 ml) cream cheese
- 1 tablespoon (15 ml) honey
- 1 teaspoon (5 g) garlic powder
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Place boneless, skinless chicken breasts on a clean cutting board.
- Carefully create a pocket in each breast without cutting all the way through.
- Season both sides of the chicken with salt and pepper.
- In a bowl, combine blackberries, jalapeños, cream cheese, honey, and garlic powder.
- Gently mash the blackberries, leaving some whole for texture.
- Taste the mixture and adjust seasoning with salt and pepper if needed.
- Stuff each chicken pocket with the blackberry-jalapeño mixture.
- Secure the openings with toothpicks or kitchen twine.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the stuffed chicken for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes until cooked through.
