Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 medium apples (such as Gala or Honeycrisp), peeled, cored, and sliced
  • Optional: Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Spread half of the batter evenly into the prepared cake pan.
  7. Arrange the sliced apples over the batter.
  8. Spoon the remaining batter over the apples, spreading it to cover.
  9. Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the Swedish apple cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  11. Dust with powdered sugar, if desired, before serving your easy Swedish apple cake.
