Ingredients
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 pound mascarpone cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs, separated
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 24 ladyfingers
- 1/2 cup strawberry puree
- Optional: Fresh mint leaves for garnish
Instructions
- In a bowl, combine sliced strawberries with 1/4 cup sugar and lemon juice. Let macerate for 15 minutes.
- In a separate bowl, beat mascarpone cheese and 1/2 cup sugar until smooth.
- Beat egg yolks into the mascarpone mixture one at a time until well combined. Stir in vanilla extract.
- In a clean bowl, beat egg whites with salt until stiff peaks form. Gently fold the egg whites into the mascarpone mixture.
- Dip ladyfingers briefly into strawberry puree. Arrange a layer of dipped ladyfingers in the bottom of a 9×13 inch baking dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Layer half of the sliced strawberries over the mascarpone.
- Repeat layers with remaining ladyfingers, mascarpone mixture, and strawberries.
- Cover and refrigerate for at least 4 hours, or preferably overnight, to allow the strawberry tiramisu to set.
- Garnish with fresh mint leaves before serving your homemade strawberry tiramisu.
Notes
- For a stronger strawberry flavor, you can add a teaspoon of strawberry extract to the mascarpone mixture.
