- 1 cup (250g) chopped Medjool dates
- 1 cup (240ml) boiling water
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (180°C). Grease an 8-inch (20cm) square baking pan.
- In a small bowl, combine the chopped dates and boiling water. Let the dates soak for 30 minutes to soften.
- In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, mixing well after each addition.
- Drain the dates, reserving the soaking liquid. Mash the dates into a smooth paste.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Add the mashed dates and the reserved date-soaking liquid to the butter mixture, mixing until well combined.
- Gradually fold in the dry ingredients until just incorporated, being careful not to overmix.
- Pour the batter into the prepared baking pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the pudding to cool for 10-15 minutes before serving.
