Description

A classic spinach quiche recipe, perfect for breakfast, brunch, or a light meal. This easy spinach quiche combines fresh spinach with a creamy egg custard in a flaky pie crust.


Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 tablespoon butter
  • 1 cup chopped onion
  • 2 cups fresh spinach, chopped
  • 3 large eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Swiss cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Press the unbaked pie crust into a 9-inch pie plate.
  3. Melt butter in a skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  4. Add spinach to the skillet and cook until wilted, about 3 minutes. Drain any excess liquid.
  5. Spread the spinach and onion mixture evenly in the bottom of the pie crust.
  6. Sprinkle the shredded cheese over the spinach mixture.
  7. In a medium bowl, whisk together eggs, milk, salt, and pepper.
  8. Pour the egg mixture over the cheese and spinach in the pie crust.
  9. Bake for 40-45 minutes, or until the center is set and the top is golden brown.
  10. Let the easy spinach quiche cool for 10 minutes before slicing and serving.

Notes

  • For a crustless spinach quiche, omit the pie crust and bake in a greased pie plate.
  • You can add other vegetables like mushrooms or bell peppers to this spinach and egg pie.
  • Serve this simple spinach quiche warm.
