A classic spinach quiche recipe, perfect for breakfast, brunch, or a light meal. This easy spinach quiche combines fresh spinach with a creamy egg custard in a flaky pie crust.
Ingredients
- 1 unbaked 9-inch pie crust
- 1 tablespoon butter
- 1 cup chopped onion
- 2 cups fresh spinach, chopped
- 3 large eggs
- 1 1/2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded Swiss cheese
Instructions
- Preheat oven to 375°F (190°C).
- Press the unbaked pie crust into a 9-inch pie plate.
- Melt butter in a skillet over medium heat. Add onion and cook until softened, about 5 minutes.
- Add spinach to the skillet and cook until wilted, about 3 minutes. Drain any excess liquid.
- Spread the spinach and onion mixture evenly in the bottom of the pie crust.
- Sprinkle the shredded cheese over the spinach mixture.
- In a medium bowl, whisk together eggs, milk, salt, and pepper.
- Pour the egg mixture over the cheese and spinach in the pie crust.
- Bake for 40-45 minutes, or until the center is set and the top is golden brown.
- Let the easy spinach quiche cool for 10 minutes before slicing and serving.
Notes
- For a crustless spinach quiche, omit the pie crust and bake in a greased pie plate.
- You can add other vegetables like mushrooms or bell peppers to this spinach and egg pie.
