Ingredients
- 1 pound sushi-grade tuna, finely diced
- 1/4 cup Japanese mayonnaise
- 2 tablespoons Sriracha sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 green onion, thinly sliced
- 1/2 teaspoon toasted sesame seeds
- 2 cups sushi rice
- 2 1/2 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- Vegetable oil, for frying
Instructions
- Cook the sushi rice according to package directions.
- While the rice is cooking, prepare the spicy tuna mixture. In a bowl, combine the diced tuna, Japanese mayonnaise, Sriracha sauce, soy sauce, sesame oil, green onion, and sesame seeds. Mix well.
- Once the rice is cooked, mix in the rice vinegar, sugar, and salt. Let it cool slightly.
- Grease a baking dish and press the seasoned sushi rice evenly into the dish, about 1/2 inch thick. Chill for at least 1 hour until firm.
- Cut the chilled rice into small squares or rectangles.
- Heat about 1 inch of vegetable oil in a skillet over medium-high heat.
- Fry the rice cakes until golden brown and crispy on both sides. Remove from oil and drain on paper towels.
- Top each crispy rice cake with a spoonful of the spicy tuna mixture.
