- 2 large eggs, separated
- 2 tablespoons whole milk
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- 2 tablespoons sugar
- 1/2 teaspoon vinegar or lemon juice
Instructions
- Separate the egg whites from yolks into two clean bowls.
- Whisk together the egg yolks with milk and vanilla until smooth. Sift in flour and baking powder, then mix until no lumps remain.
- Add vinegar or lemon juice to the egg whites. Whisk until frothy, then gradually add sugar. Continue beating until stiff peaks form.
- Gently fold ⅓ of the meringue into the yolk mixture to lighten it. Then fold in the remaining meringue gently until just combined. Do not overmix.
- Scoop or pipe batter into a lightly greased nonstick pan over low heat. Make 2-3 round soufflé pancakes with space between them.
- Cover and cook for 7–8 minutes until the bottoms are golden. Carefully flip, cover again, and cook another 5–6 minutes.
- Serve the soufflé pancakes immediately with your favorite toppings.
Notes
- For extra height, stack a second scoop of batter on top halfway through the first side’s cooking time.
- Cook over low heat and use a lid to keep them soft and fluffy.
- A nonstick pan with a lid works best for even cooking.
- Room temperature eggs yield better meringue volume.
- Vinegar or lemon juice stabilizes the egg whites.
