- 1 lb Shrimp, peeled and deveined
- 2 tbsp Butter
- 1 Onion, chopped
- 2 Carrots, chopped
- 2 Celery stalks, chopped
- 2 cloves Garlic, minced
- 4 cups Shrimp broth
- 1 cup Heavy cream
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1 tbsp Fresh parsley, chopped
Instructions
- Melt butter in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in shrimp broth and bring to a simmer.
- Add the shrimp and cook for 3-5 minutes, or until pink and cooked through.
- Reduce heat to low and stir in heavy cream. Do not boil.
- Season with salt and pepper.
- Garnish with fresh parsley before serving this delicious shrimp soup.
Notes
- For a spicier shrimp soup, add a pinch of red pepper flakes with the garlic.
- You can use chicken broth if shrimp broth is unavailable.
