Description

This Shaved Asparagus & Fennel Salad is a light, flavorful, and refreshing side dish that’s perfect for hot summer days.


Ingredients

  • 1 pound asparagus, shaved into thin strips
  • 1 fennel bulb, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. In a large bowl, combine the shaved asparagus and sliced fennel.
  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper.
  3. Pour the dressing over the asparagus and fennel, and toss gently to coat.
