- 2¼ tsp active dry yeast (1 packet)
- 1½ cups warm water (110°F / 43°C)
- 2 cups semolina flour
- 1½ cups all-purpose flour (plus more for dusting)
- 2 tsp salt
- 1 tbsp olive oil
- 2 tbsp sesame seeds (for topping)
- 1 egg white + 1 tbsp water (optional, for egg wash)
Instructions
- Dissolve yeast in warm water and let sit 5–10 minutes until foamy.
- Combine semolina flour, all-purpose flour, and salt.
- Add dry ingredients to yeast mixture and mix until a shaggy dough forms.
- Knead 8–10 minutes until smooth and elastic.
- Place dough in an oiled bowl, cover, and let rise 1–1½ hours until doubled.
- Punch down dough, shape into a round or oval loaf, and place on lined baking sheet.
- Cover and let rise 30–45 minutes until puffy.
- Brush with egg wash if using and sprinkle with sesame seeds.
- Bake at 425°F (220°C) for 25–30 minutes until golden and hollow-sounding.
- Let cool completely on a wire rack before slicing.
