Description

Semolina Bread with Sesame Seeds is a rustic, golden loaf made with durum wheat semolina flour and yeast, giving it a slightly nutty flavor, chewy crumb, and crisp crust. Finished with aromatic sesame seeds, this Mediterranean-inspired bread is perfect for sandwiches, dipping in olive oil, or serving alongside soups and stews.


Ingredients

  • 2¼ tsp active dry yeast (1 packet)
  • 1½ cups warm water (110°F / 43°C)
  • 2 cups semolina flour
  • 1½ cups all-purpose flour (plus more for dusting)
  • 2 tsp salt
  • 1 tbsp olive oil
  • 2 tbsp sesame seeds (for topping)
  • 1 egg white + 1 tbsp water (optional, for egg wash)

Instructions

  1. Dissolve yeast in warm water and let sit 5–10 minutes until foamy.
  2. Combine semolina flour, all-purpose flour, and salt.
  3. Add dry ingredients to yeast mixture and mix until a shaggy dough forms.
  4. Knead 8–10 minutes until smooth and elastic.
  5. Place dough in an oiled bowl, cover, and let rise 1–1½ hours until doubled.
  6. Punch down dough, shape into a round or oval loaf, and place on lined baking sheet.
  7. Cover and let rise 30–45 minutes until puffy.
  8. Brush with egg wash if using and sprinkle with sesame seeds.
  9. Bake at 425°F (220°C) for 25–30 minutes until golden and hollow-sounding.
  10. Let cool completely on a wire rack before slicing.
