  • 1 lb mixed seafood (shrimp, mussels, clams, white fish)
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 4 cups seafood or fish broth
  • 1/2 cup dry white wine
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare your mixed seafood, ensuring shrimp are peeled and deveined, mussels and clams are scrubbed clean.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  3. Add minced garlic and cook for 1 minute more until fragrant.
  4. Stir in diced tomatoes, seafood broth, and white wine. Bring to a simmer.
  5. Add oregano and thyme. Season with salt and pepper to taste.
  6. Add the mixed seafood to the simmering broth. Cover and cook for 5-7 minutes, or until the seafood is cooked through and the mussels/clams have opened. Discard any unopened shellfish.
  7. Ladle the seafood stew into bowls. Garnish with fresh parsley. Serve your ocean-inspired seafood stew hot.
