- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/4 cup low-sodium chicken broth
Instructions
- Pat the chicken cubes dry with paper towels and season them evenly with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken to the hot pan and cook for 3-4 minutes per side, until golden brown and cooked through.
- Add the garlic and oregano to the pan and cook for 1 minute, until fragrant.
- Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan.
- Simmer for 2-3 minutes, until the sauce has thickened slightly.
