Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups salmon broth
- 1 pound salmon fillet, skin removed and cut into 1-inch pieces
- 1 cup half-and-half
- 1/2 cup heavy cream
- 2 tablespoons fresh dill, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Pour in the salmon broth and bring to a simmer.
- Add the salmon pieces to the simmering broth. Cook for 5-7 minutes, or until the salmon is cooked through and flakes easily.
- Reduce heat to low. Stir in the half-and-half and heavy cream. Do not boil.
- Stir in the fresh dill. Season with salt and pepper to taste.
- Serve your delicious salmon chowder hot.
Notes
- For a smoked salmon chowder, you can use smoked salmon instead of fresh.
- Add corn or peas for a vegetable salmon chowder.
- If you prefer a salmon chowder without potatoes, omit them from the recipe.
