Description

A delicious Roasted Broccoli Caesar Salad featuring tender roasted broccoli florets tossed in a classic Caesar dressing.


Ingredients

  • 1 lb broccoli florets
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 head romaine lettuce, chopped
  • 1/2 cup croutons
  • 1/4 cup grated Parmesan cheese
  • For the Caesar Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the broccoli florets with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
  3. Roast the broccoli for 15-20 minutes, or until tender and slightly browned.
  4. While the broccoli is roasting, prepare the Caesar dressing. In a medium bowl, whisk together mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, minced garlic, and black pepper. Slowly drizzle in 2 tablespoons of olive oil while whisking until smooth.
  5. In a large salad bowl, combine the chopped romaine lettuce, roasted broccoli, croutons, and Parmesan cheese.
  6. Pour the Caesar dressing over the salad and toss gently to coat all ingredients.
  7. Serve your Roasted Broccoli Caesar Salad immediately.
