- 4 boneless, skinless chicken breasts
- 8 fresh apricots, halved and pitted
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound Brussels sprouts, halved
- 2 medium sweet potatoes, peeled and diced
Instructions
- Preheat the oven to 400°F.
- In a large baking dish, arrange the chicken breasts and apricot halves.
- In a small bowl, whisk together the honey, olive oil, garlic, thyme, salt, and pepper. Pour the mixture over the chicken and apricots, making sure everything is evenly coated.
- Roast for 25-30 minutes, until the chicken is cooked through and the apricots are softened and caramelized.
- Meanwhile, toss the Brussels sprouts and sweet potato cubes with a drizzle of olive oil and season with salt and pepper.
- Arrange the roasted vegetables around the chicken and apricots and return to the oven for an additional 15-20 minutes, or until the vegetables are tender.
- Serve the Roasted Apricot Chicken Dinner immediately, garnished with fresh thyme if desired.
