- 2 large apples, cored and sliced (choose your favorite variety, such as Gala or Honeycrisp)
- 2 large pears, cored and sliced (Bartlett or Bosc work great)
- 2 tablespoons coconut sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract (optional, for added flavor)
- 1 tablespoon coconut oil (or butter, if preferred)
- A pinch of sea salt (to balance the sweetness)
- Optional: A dash of ground ginger, nutmeg, or cloves for an extra autumnal kick!
Instructions
- Preheat your oven to 375°F (190°C) to ensure it’s ready to roast the fruit.
- Core and slice the apples and pears into thin wedges or rounds, depending on your preference. Make sure they’re roughly the same size for even cooking.
- In a large bowl, add the sliced apples and pears. Sprinkle them with coconut sugar, cinnamon, and a pinch of sea salt. Toss the fruit gently to ensure each slice is coated with the sugar and spices. For extra flavor, you can also add vanilla extract at this point.
- Spread the fruit evenly on a baking sheet lined with parchment paper. Drizzle the coconut oil over the fruit for a nice glaze and to prevent sticking. Roast in the preheated oven for 25-30 minutes, or until the fruit is tender and caramelized, flipping once halfway through the roasting time.
- Remove from the oven, let cool for a few minutes, and then serve warm. The roasted apples and pears are perfect on their own, or you can top them with whipped cream, vanilla ice cream, or a dollop of yogurt for an extra indulgence.
