  • 1 cup uncooked short-grain rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Optional: raisins, dried cranberries, or chopped nuts for topping

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, milk, sugar, vanilla extract, ground cinnamon, and a pinch of salt.
  3. Bring the mixture to a gentle boil over medium heat, stirring occasionally to prevent the rice from sticking.
  4. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 20-25 minutes, or until the rice is tender and most of the milk has been absorbed. Stir occasionally during this time.
  5. Remove the vanilla cinnamon rice pudding from the heat and let it sit for 5 minutes.
  6. Serve the creamy vanilla cinnamon rice pudding warm or chilled. Garnish with additional cinnamon or your favorite toppings if desired. This homemade vanilla cinnamon rice pudding is delicious.
