- 1 cup (2 sticks) unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch baking pan.
- In a large bowl, whisk together the melted butter and 2 cups of sugar. Beat in the 4 eggs, one at a time, until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- In another bowl, beat the cream cheese with the 1/2 cup of sugar, 1 egg, and vanilla until smooth and creamy.
- Spread half of the brownie batter into the prepared baking pan. Dollop the cheesecake mixture over the top and use a knife to swirl it through the brownie batter. Top with the fresh raspberries.
- Bake for 30-35 minutes, until the center is almost set. Allow to cool completely before cutting into bars.
